Raised in Bahia, chef Morena Leite promotes dinner in Paris

With the aim of promoting gastronomy abroad and closing Brazilian participation with a flourish at SIAL Paris (Salon International de l’alimentation). The Capim Santo Institute (ICS) held an exclusive Magno Dinner at Café de L’Homme, in Paris, on Monday night (21). The institute was founded by Morena Leite, a chef who grew up in Quadrado de Trancoso.
The event provided a unique experience, with the presentation of a seven-course menu, prepared by renowned chefs, who celebrated peculiar Brazilian ingredients with contemporary touches, for a select group of guests.
“Participating in the curation of an event that celebrates the richness of Brazilian gastronomy, especially in the culinary capital of the world, is a joy and an honor. Furthermore, this becomes a great moment in the history that the ICS is building”, Luccio Oliveira, President of the Capim Santo Institute, told us.
Among the highlights of the night, chef Morena Leite presented shrimp with cassava lace, Marcelo Ballardin served gambero rosso with tucupi, and Bel Coelho surprised with his grilled mushroom with manteiguinha bean farofa and tucupi broth.
The team of chefs also presented the fish dish with sago, signed by Vico Crocco, the fillet with soft yolk and açaí sauce, offered by Rafael Rego, and the duck rice by Rafael Cagali. Alessandra Montagne closed the night with dessert cupuaçu ice cream and cassava cake with coconut.
“Through this project, we want to not only exalt the flavors that define Brazil, but also tell the stories behind each dish, each ingredient. Our gastronomy is a reflection of the diversity of cultures, peoples and traditions,” added Mariana Fragoso, director of the Capim Santo Institute.
