Bahian production is considered to be of high quality, but the ranking does not guarantee lower prices for the end consumer

Bahia is the fourth state that produces the most coffee in Brazil and the production is considered to be of high quality. Despite this, the spike in the price of the product also affected Bahians. According to the Brazilian Institute of Geography and Statistics (IBGE), between January and September 2024, ground coffee accumulated a 30.13% increase in Salvador and the Metropolitan Region.

The cultivation of Arabica coffee in Bahia takes place in the Planalto regions (center-south and center-north of Bahia) and in the Cerrado (Far-West of Bahia). Coffee crops in the Planalto are divided into three microregions: Chapada Diamantina, Vitória da Conquista and Brejões. Coffee plantations in the Cerrado are divided into four municipalities: Barreiras, Luís Eduardo Magalhães, São Desidério and Cocos.

Conilon coffee is concentrated in the Atlantic region, in the South of Bahia and, specifically, in four micro-regions: Extremo-Sul, Costa do Descobrimento, Litoral Sul and Baixo Sul. Seller Denise Souza, 36 years old, who considers herself a coffee lover , said that the drink has an invigorating effect and that he is struggling to maintain the habit.

“I drink coffee when I wake up, I have a smaller one after lunch and, when I have a break at work, I drink a little more. No matter how hot it is, I need my coffee. At home, we change brands from the beginning of the year, we got a cheaper one, but it’s still heavy”, he laments.

Bahian coffee is considered to be of high quality, reaching 80 points on the SCA (Specialty Coffee Association) Sensory Assessment Methodology scoring scale, which goes up to 100. This assessment includes attributes such as fragrance and aroma, uniformity, absence of defects, sweetness, flavor, acidity, body, finish, harmony, final concept – the latter refers to the general impression attributed by the classifier.
