Meat with okra
Ingredients
- 500 g beef rump cut into cubes
- 250 g of okra
- 1 onion peeled and chopped
- 2 garlic cloves, peeled and crushed
- 2 tomatoes seeded and chopped
- 1 tablespoon tomato sauce
- 1 teaspoon cumin powder
- 1 cup of meat broth
- Salt, ground black pepper, chopped coriander and olive oil to taste
Preparation mode
In a pan, add the olive oil and place over medium heat to heat. Add the onion and garlic and brown. Add the meat and sear until golden. Add the tomato and tomato sauce and mix. Cook for 10 minutes and cover with the meat broth. Cover the pan and cook for another 40 minutes. Meanwhile, using a knife, cut the okra into pieces. When the meat is tender, add the vegetable to the pan and cook for 15 minutes. Serve then.
Tip: serve decorated with mint leaves.
Okra caruru
Ingredients
- 1 kg of chopped okra
- 100 g shelled and roasted peanuts
- 100 g dried shrimp
- 1/2 cup of palm oil
- 250 ml coconut milk
- 2 onions peeled and chopped
- Juice of 1 lemon
- Salt to taste
Preparation mode
In a blender, place half the shrimp and water and blend until you obtain a homogeneous consistency. Sieve and reserve just the broth. Still in the blender, add the shrimp broth, onion, coconut milk and peanuts and blend until you get a creamy texture. Book.
In a pan, add the okra, the rest of the shrimp and the lemon juice and stir to combine. Add the mixture with reserved shrimp broth and palm oil and mix. Season with salt and black pepper and cook over medium heat for 25 minutes, stirring constantly. Serve then.

Breaded okra
Ingredients
- 300 g of sanitized okra and cut into pieces
- 300 g of fubá
- 2 eggs
- Salt and ground black pepper to taste
- Oil for frying
Preparation mode
In a container, place the eggs and, using a fork, mix. In another container, add the cornmeal, salt and black pepper and stir to combine. Afterwards, dip the okra in eggs and cornmeal. Place in a pan with hot oil and fry until golden. Serve then.
